Super Moist Pumpkin Bread Recipe

1 3/4 Cup Unbleached Flour
1 3/4 cup Wheat flour
2 cups packed brown sugar
1/3 cup granulated sugar
1/3 cup splenda
2 cups pumpkin puree
1 cup unsweetened applesauce
2 tsp baking soda
1 tsp salt
2/3 cup light coconut milk
2 tsp pumpkin pie spice
2 tsp ground Cinnamon
1 cup toasted walnuts, chopped



Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8x4 inch loaf pans.

In a large bowl combine all ingredients and Mix until all of the flour is gone. Fold in the nuts then Pour batter into the prepared pans.

Bake at 350 degrees F (175 degrees C) for 1 hour and or until a toothpick inserted in the center comes out clean. Remove from oven and cover loaves with foil tightly. Allow to steam for 10 minutes. Remove foil and turn out onto a cooling rack. Tent lightly

  3. btw you can omit the regular sugar all together if you dont want the bread to be supper sweet, or you can reduce how much you use as well and you can't tell the difference!
